
ORGANIC DURUM WHEAT PASTA CONCHIGLIE 500g
Alce Nero durum wheat and whole-grain durum wheat pasta is produced with organic durum wheat grown mainly in Sicily and Puglia, two regions especially well suited to this crop. The semolina is subsequently processed into pasta and dried at low temperatures (maximum 70°C). It takes about 18 hours for long pasta like spaghetti and linguine to dry and 12 hours for short pasta. This process is fundamental to preserve the nutritional ingredients. Whole-grain pasta, rich in fibre, should be alternated with white pasta for a healthy and balanced diet. Compared to normal durum wheat pasta it contains more protein and fewer carbohydrates (meaning it has fewer calories) and consuming it regularly helps keep down blood cholesterol, triglyceride and glucose levels, since fibre reduces the absorption of sugar and fat.
